The quality of fresh milk after being milked has a direct influence on that of UHT milk. The research has made an in-depth study on breeding practice and effects of regimen, milking and storing methods as well as transportation from breeding households to dairy factories on fresh milk quality; especially the effects of storing temperature and duration in dairy factories on microorganism quality of milk before processed with a view to finding appropriate storing conditions.

In this paper, the effects of some stimulants on the growth and cephalosporin C production by A. chrysogenum AC 880 have been studied. Among six compounds tested, DL-methionine gave the best results in enhancing the biomass and cephalosporin C production. Further studies with DL-methionine showed that addition of this compound at the final concentration of 0,0268 Mat 24 hours after inoculation resulted in the highest dry biomass of 20.9 mg/ml at 72 hours run time, and the antibiotic activity peaked at 120 hours.

Bacillus has several interesting characteristics, which are suitable for polluted lake water treatment. So it plays a major role in biological products. Among 50 strains, 5 strains, N11, N16, N18, N20 and N21, were selected. They can remove 72-79% of COD in the water after 6 days. Base on biochemical characteristics, N11 belongs Bacillus subtilis; N16, N20 and N21 belong to Bacillus megaterium; and N18 belongs to Bacillus lichenfomis. The strains grow very well at 30oC and reach maximum OD after 21h.

Kombucha is a well-known fermented beverage from fresh green teas, which grows everywhere in Vietnam. This study aims at using Moc Chau green teas for producing Kombucha and the results showed that Moc Chau green teas and saccharine are suitable for this purpose and the fermentation time in 6 days at 26oC gives higher qualitative and sensory values of final fermented drink.

Nowadays, fresh water sources such as lakes, ponds and rivers, in the world as well as in Vietnam are seriously polluted. For polluted lake water, treatment on spot is interested because it can recover ecosystem of the lake and surroundings. In this method, biological products, which contain a mixture of microorganisms, are used and among them Bacillus plays a main role. In this study, Bacillus subtilis CN2 shows some characteristics, which are suitable for treatment of polluted lake water. B. subtilis CN2 produced some proteases, crude enzymes also digest native collagen from rat tail tendon and grows well in a wide range of temperature 30-40oC. When growing in polluted lake water, strain CN2 can remove 80% COD after 6 days.

In this study, the authors are conducting to process and research the antibacterial capacity of some herbal on the Enterobacteriaceae and negative bacteria which were separated from white facee disease Tiger Prawn, since then we keep administrating these herbal that enable antibacterial together some of herbal under appropriate proportion into finished product. This product is applied to treat white facee from Tiger Prawn

Hanoi, 2006 Production of active alpha-glucosidase by recombinant and Escherichia coli in shake flask cultures
Cultivation parameters, which influence the production of the enzyme alpha-glucosidase from Saccharomyces cerevisiae in recombinant Escherichia coli has been investigated in shake flask conditions. At temperature optimum for growth, alpha-glucosidase accumulates partially as inclusion bodies. Low temperature of 24°C and low pH of 5 and defined medium increase the specific activity of produced alpha-glucosidase. The low temperature and low pH value, however, decrease the growth of the cells. Therefore the volumetric activity of alpha-glucosidase, which depends on both specific activity and biomass, remained unchanged. Meanwhile low inducer IPTG concentration can increase the volumetric activity of alpha-glucosidase.
